It’s not illegal for a man to draw up a Will without his spouse’s knowledge. She can do the same thing.

I assume from the question that you believe the son exerted some influence over the father to convince him to not leave anything to the spouse. That’s always possible, but to have the Will overturned, or even to contest it, you will need to PROVE that the man was mentally incompetent at the time he signed, and/or that the son exerted some kind of duress or other undue influence over him.
