If I buy an entire row of seats on a long flight so no one is next to me, can the airline sell one of my empty seats to someone or will they respect the fact that the empty seats are mine to do as I please with?

The airline will happily take your money for the extra seats. When the attendant counts and notices extra seats, if there are any standby passengers (because the airlines ALWAYS oversell, and there is also airline employees who get to fly for free) they will take your spots and give you no compensation.
